Red Prince Apple Celery Root Salad
This unique salad is as delicious as it healthy. It’s super easy to prepare for a snack, light lunch or as a scrumptious side dish with dinner.
2 – Red Prince apples
1 – Celery Root
1/2 cup (125 mL) – Raisins or dried cranberries
1/2 cup (125 mL) – Low fat mayonnaise
3 tbsp (45 mL) – Lemon juice (approx. juice of one lemon)
1 tbsp (15 mL) – Chopped garlic
Wash, and core the Red Prince apples. Cut skin off one celery root. Wash and grate apples and celery root, combine in bowl.
Add 1/2 cup (125 mL) of raisins or dried cranberries to the bowl.
In a second, smaller bowl, whisk together 1/2 cup (125 mL) of low fat mayonnaise, juice of one lemon, 3 tbsp (45 mL). chopped parsley and 1 tbsp (15 mL) chopped garlic.
Gently fold the dressing into the apple mixture.
