Asian Red Prince Apple Coleslaw
When the same old salad with every meal starts to get a bit boring, you can put the spark back in supper-time with a cultural twist on traditional coleslaw. Our recipe is simple, and pairs delightfully with so many dishes – like the Easy Red Prince Apple Chicken Bake.
1 – Napa cabbage
2 – Carrots
1 – Bunch of green onions
2 – Red Prince apples
1/8 cup (30 mL) – Rice wine vinegar
2 tbsp (30 mL) – Dijon mustard
1 tsp (5 mL) – Finely chopped garlic
1/3 cup (75 mL) – Olive oil
1/4 cup (50 mL) – Sesame seeds
Wash one napa cabbage and cut into long thin pieces.
Wash and peel two carrots, then grate.
Wash one bunch of green onion and cut into small rings.
Wash two Red Prince apples and grate.
Whisk together 1/8 cup (30 mL) rice wine vinegar, 2 tbsp (30 mL) Dijon and 1 tsp (5 mL) garlic. Slowly whisk in 1/3 cup (75 mL) olive oil until all is combined.
Toss all vegetables and Red Prince apples with the dressing.
Sprinkle coleslaw with 1/4 cup (50 mL) sesame seeds.
