Red Prince Apple Cheddar Stuffed French Toast
Breakfast will never be boring again. Offering the most delectable combination of sweet and savoury, the Red Prince Apple Cheddar Stuffed French Toast is a decadent dish that can be cooked up whenever you’re in the mood for something different. It’s also easy enough that kids can use this recipe to prepare their own snack. (under adult supervision of course)
1/4 cup (50 mL) – Milk, skim or 2%
1/4 tsp (1 mL) – Pure vanilla extract
1- Red Prince apple, cored
A pinch of cinnamon
8 – Slices multigrain bread
4 oz. (125 g) – Old white cheddar, sliced or grated
4 slices – Bacon, cooked and chopped
PER SERVING (1 sandwich with 1 tbsp [15 mL] maple syrup): 501 calories, 18 g fat, 9 g saturated fat, 175 mg cholesterol, 588 mg sodium, 61 g carbohydrates, 7 g fibre, 21 g protein. % RDI: 27% calcium, 21% iron, 6% vitamin A, 3% vitamin C.
Makes 4 servings
In a shallow bowl, whisk together eggs, milk and vanilla, set aside.
Thinly slice apple and toss with cinnamon and set aside.
Heat a non stick pan over medium heat and lightly spray with cooking oil.
Dip 1 slice of bread into egg mixture and place on hot pan and top with 1/4 of apple slices and 1/4 cheddar. Top with another slice of bread dipped in egg mixture.
Cook until golden brown and the cheese is completely melted, approximately 3 to 4 minutes on each side.
Repeat method for remaining 3 French toast sandwiches.
If desired, keep warm in 200°F (100°C) oven until ready to eat.
Serve with bacon bits and maple syrup.
Chef’s Tip: Substitute bacon for ham or turkey bacon.
