3 Red Prince apples, cored and finely diced 1/4 inch (5 mm) cubes
1/3 cup (75 mL) – Ground flax meal
2/3 cup (150 mL) – Almond butter
3/4 cup (175 mL) – Creamed honey
4 cups (1 L) – Whole grain brown crispy rice
Makes 16 squares.
Preheat oven to 375°F (190°C).
Line 2 large baking sheets with parchment paper and spread out diced apples in a single layer.
Bake in upper third and lower third of oven alternating and rotating once, if necessary, for 25-30 minutes until apple pieces are soft, dry and a bit chewy. Set aside to cool.
In a large mixing bowl, combine flax, almond butter and honey. Gently mix in crispy rice with your hands, ensuring rice is thoroughly combined with almond butter mixture. Add apples and combine.
Line a 9 inch x 9 inch (23 cm x 23 cm) baking pan with plastic wrap or parchment. Transfer mixture into pan and spread evenly, pressing firmly to form a slab. Keep refrigerated and wait at least 1 hour before slicing and serving.
Chef’s Tip: Use peanut, cashew or sunflower butter in place of almond butter, if desired.
