Red Prince Apple Frozen Yogurt Pops
Kids will love to make and eat this healthy treat! A snap to prepare, this sweet and frosty snack will inspire some delicious fun in the kitchen. Make your freezer pop by using an array of shaped popsicle molds – i.e. rocket ships!
2 – Red Prince apples
1/4 cup (50 mL) – Maple syrup
1 1/2 cups (375 mL) – Non-fat vanilla Greek yogurt
PER SERVING (1 pop): 60 calories, 0 g fat, 0 g saturated fat, 0 mg cholesterol, 13 mg sodium, 12 g carbohydrates, 1 g fibre, 3 g protein. % RDI: 0% calcium, 1% iron, 0% vitamin A, 2% vitamin C.
Makes 10 pops.
Peel, core and finely dice 1 apple.
Place a small sauté pan over medium-high heat, add diced apple and maple syrup. Simmer for about 10 minutes until water has evaporated and apples are slightly translucent, glossy and sticky. Place apples in a large bowl to cool.
Core and finely shred 1 apple with a grater and add to bowl. Stir in yogurt.
Spoon mixture into popsicle molds and freeze at least 6 hours or overnight.
Chef’s Tip: Add 1 tbsp (15 mL) finely minced fresh mint for a refreshing twist.
