Vegan Apple Crisp

Instructions:

Preheat oven to 350°F.

Prepare crisp topping by mixing vegan butter and sugar together in a bowl. Then add in oats, flour, nutmeg and cinnamon. Set aside.

Peel, core and cut Red Prince apples and place in mixing bowl. Sprinkle over cornstarch, lemon juice and brown sugar; then mix to combine.  Pour filling in 20cm square baking dish and place squares of vegan butter around the top evenly.

Spoon over crumble topping and spread evenly.

Bake uncovered for approx. 40 minutes or until apples are bubbling and soft, and topping is crisp.

Enjoy warm or cold!

 

Note: If you are not vegan, the vegan butter may be substituted with regular butter.

Ingredients for the Crisp Topping:

½ cup (125 mL) vegan butter

1/3 cup (85 mL) brown sugar

2/3 cup (170 mL) oats

2/3 cup (170 mL) all purpose flour

1 tsp nutmeg

2 tsp cinnamon

 

Ingredients for the Filling:

4-5 Red Prince apples, peeled, cored and cut into even bite-sized pieces

1 tbsp fresh lemon juice

¼ cup brown sugar

1 tbsp cornstarch

2 tbsp vegan butter, cut into 1cm squares
