Royal Energy Bars These all-natural energy bars are delicious, high in fibre and a source of protein. Ideal for a breakfast on the go or an anytime snack. Their convenience and taste will be a royal hit with kids and adults alike. Ingredients:   3 – Large Red Prince apples, skin on, cored and diced into 1/4 inch (5 mm) cubes 3/4 cup (175 mL) – Rolled oats 3/4 cup (175 mL) – Sweetened flaked coconut 3/4 cup (175 mL) – Sunflower seeds 3/4 cup (175 mL) – Pumpkin seeds 3/4 cup (175 mL) – Puffed rice or cereal flakes 1 cup (250 mL) – Medjool dates, about 15 1/2 cup (125 mL) – Sunflower butter   PER SERVING (1 piece): 218 calories, 12 g fat, 3 g saturated fat, 0 mg cholesterol, 15 mg sodium, 24 g carbohydrates, 3 g fibre, 6 g protein. % RDI: 2% calcium, 15% iron, 0% vitamin A, 2% vitamin C. Method: Makes 16 pieces.   Preheat oven to 275°F (140°C). Spread apples on parchment lined baking sheet (or use food dehydrator and follow manufacturer instructions). Bake for approximately 1 hour 30 minutes or until apples have achieved the consistency of raisins. Let cool. In large bowl, combine oats, coconut, sunflower seeds, pumpkin seeds and cereal. Set aside. Remove seeds from dates and chop into small pieces. Add dates and sunflower butter to oat mixture and work thoroughly together with hands until well combined and mixture holds its shape when squeezed. Mix in dried apples. Make your freezer pop by using an array of shaped popsicle molds – i.e. rocket ships! Ingredients:   2 – Red Prince apples 1/4 cup (50 mL) – Maple syrup 1 1/2 cups (375 mL) – Non-fat vanilla Greek yogurt   PER SERVING (1 pop): 60 calories, 0 g fat, 0 g saturated fat, 0 mg cholesterol, 13 mg sodium, 12 g carbohydrates, 1 g fibre, 3 g protein. % RDI: 0% calcium, 1% iron, 0% vitamin A, 2% vitamin C. Method: Makes 10 pops.   Peel, core and finely dice 1 apple. Place a small sauté pan over medium-high heat, add diced apple and maple syrup. Simmer for about 10 minutes until water has evaporated and apples are slightly translucent, glossy and sticky. Place apples in a large bowl to cool. Core and finely shred 1 apple with a grater and add to bowl. Stir in yogurt. Red Prince Apple Crispy Treat For a quick and easy snack, try the Red Prince Apple Crispy Treat. This easy-to-make, healthy and portable snack is a sweet delight, ideal for active days spent outdoors. Ingredients:   3 Red Prince apples, cored and finely diced 1/4 inch (5 mm) cubes 1/3 cup (75 mL) – Ground flax meal 2/3 cup (150 mL) – Almond butter 3/4 cup (175 mL) – Creamed honey 4 cups (1 L) – Whole grain brown crispy rice Method: Makes 16 squares.   Preheat oven to 375°F (190°C). Line 2 large baking sheets with parchment paper and spread out diced apples in a single layer. Bake in upper third and lower third of oven alternating and rotating once, if necessary, for 25-30 minutes until apple pieces are soft, dry and a bit chewy. Set aside to cool. In a large mixing bowl, combine flax, almond butter and honey. Gently mix in crispy rice with your hands, ensuring rice is thoroughly combined with almond butter mixture. Add apples and combine. Line a 9 inch x 9 inch (23 cm x 23 cm) baking pan with plastic wrap or parchment. Transfer mixture into pan and spread evenly, pressing firmly to form a slab. Red Prince Apple Crumble Pie As featured in the Toronto Star: Ontario apple grower, and Red Prince co-founder, Irma Botden makes this for her husband Marius and their four children. “As a Dutch tradition, you get pie on the weekend, but not as dessert, as in Canada,” she says. “It’s a treat for your evening coffee or on Sunday morning to share time with your family.” The Botden family loves her recipe and so will yours.   Ingredients:   6 – Red Prince apples, peeled, finely chopped 3/4 cup (185 mL) – Unsalted butter, at room temperature 3/4 cup + 3 tbsp (185 mL + 45 mL) – Granulated sugar 1 – Large egg, beaten 2  1/2 cups (625 mL) – Self-raising cake & pastry flour 1  1/2 tsp (7 mL) – Baking powder A pinch of table or fine sea salt 1/2 cup (125 mL) – Raisins 1 tbsp (15 mL) – Ground cinnamon Method: Makes 8 to 10 servings.   In a large bowl, using an electric mixer, combine butter, 3/4 cup (185 mL) sugar, egg, flour, baking powder and salt. Beat on low speed just until small, coarse crumbs form, about 30 to 60 seconds. Spread 2/3 of crumbs over bottom and edges of greased 9-inch (23-cm.) springform pan. Pat down firmly. In a large mixing bowl, combine apples, raisins, remaining 3 tbsp (45 mL) sugar and cinnamon. Spread apple mixture on crumbs in pan. Pat down firmly. Sprinkle remaining dough crumbles over apples.
