Instructions: Preheat oven to 350°F. Prepare crisp topping by mixing vegan butter and sugar together in a bowl. Then add in oats, flour, nutmeg and cinnamon. Set aside. Peel, core and cut Red Prince apples and place in mixing bowl. Sprinkle over cornstarch, lemon juice and brown sugar; then mix to combine.  Pour filling in 20cm square baking dish and place squares of vegan butter around the top evenly. Spoon over crumble topping and spread evenly. Bake uncovered for approx. 40 minutes or until apples are bubbling and soft, and topping is crisp. Enjoy warm or cold!   Note: If you are not vegan, the vegan butter may be substituted with regular butter. We think it’s a really fun adaptation of a traditional apple crisp! INGREDIENTS: 2 tbsp butter 5 cups thinly sliced Red Price apples 1 tbsp cinnamon 3/4 cup maple syrup or 1/2 cup brown sugar (your choice!) 1-1/2 cup crumbled corn chips DIRECTIONS In a large nonstick fry pan over medium/high heat. Melt butter. Once melted, add apples and cinnamon and sauté for 3-5 minutes. Add maple syrup or sugar. Continue to cook for 2 minutes. Place apple mixture in a greased 9 inch pie pan. Make your freezer pop by using an array of shaped popsicle molds – i.e. rocket ships! Ingredients:   2 – Red Prince apples 1/4 cup (50 mL) – Maple syrup 1 1/2 cups (375 mL) – Non-fat vanilla Greek yogurt   PER SERVING (1 pop): 60 calories, 0 g fat, 0 g saturated fat, 0 mg cholesterol, 13 mg sodium, 12 g carbohydrates, 1 g fibre, 3 g protein. % RDI: 0% calcium, 1% iron, 0% vitamin A, 2% vitamin C. Red Prince Apple Crispy Treat For a quick and easy snack, try the Red Prince Apple Crispy Treat. This easy-to-make, healthy and portable snack is a sweet delight, ideal for active days spent outdoors. Ingredients:   3 Red Prince apples, cored and finely diced 1/4 inch (5 mm) cubes 1/3 cup (75 mL) – Ground flax meal 2/3 cup (150 mL) – Almond butter 3/4 cup (175 mL) – Creamed honey 4 cups (1 L) – Whole grain brown crispy rice Method: Makes 16 squares.   Preheat oven to 375°F (190°C). Line 2 large baking sheets with parchment paper and spread out diced apples in a single layer. Bake in upper third and lower third of oven alternating and rotating once, if necessary, for 25-30 minutes until apple pieces are soft, dry and a bit chewy. Set aside to cool. In a large mixing bowl, combine flax, almond butter and honey. Gently mix in crispy rice with your hands, ensuring rice is thoroughly combined with almond butter mixture. Add apples and combine.
