Healthy Bowl with Sweet Potato, Apple and Avocado
Serves 2 as a meal
The healthy ingredients in this bowl perfectly compliment the sweet and tangy Red Prince® apple. You’ll be left feeling full and satisfied until your next meal.
1-2 Sweet potatoes (enough to create 2 cups cooked); peeled and cut into 1/2-inch cubes
1 tbsp oil
Salt and pepper to taste
1 tsp garlic powder
½ cup brown rice (when cooked with be 1 cup)
1 15-ounce cans black beans (slightly drained). Use half and save half for another recipe.
2 cups romaine lettuce, washed and cut into bite-sized pieces
1 Red Prince® apple, cut into bite-sized pieces
1 avocado, cut into bite-sized pieces
2-3 green onions. Remove ends; finely cut
½ cup fresh cilantro, washed and cut
1/8 cup unsalted sunflower seeds
¼ cup tahini
¼ cup water
3 tbsp lime juice
Salt to taste
Prepare dressing: Thoroughly blend ingredients and set aside. This can be stored for 3 days in the fridge, in an air-tight container. Stir again before use. You may choose to add a little more water to thin it further, to suit your preference.
Salad: Preheat oven at 400ºF. Line a baking tray with parchment paper. Toss sweet potatoes with oil and season with salt, pepper and garlic powder. Roast until tender, tossing halfway through, approx. 20 minutes.
While that is cooking, cook brown rice, and wash and chop the other ingredients.
Drain and rinse beans in a colander. Keep a little of the liquid if you want to warm them. If so, place into a small saucepan and warm on the stovetop, then drain before serving.
To serve, create base in a generous sized bowl with rice and lettuce. Top with other ingredients, add garnish and drizzle with tahini dressing.
Best served when freshly made though left overs can be kept in an air-tight container in the fridge for up to 3 days.
