Irish Apple Cake
Ingredients
Streusel Topping:
- 105 g all-purpose flour
- 21 g oats
- 115 g granulated sugar
- Large pinch of salt
- 85 g unsalted butter
Cake:
- 115 g unsalted butter
- 115 g granulated sugar
- 10 ml vanilla extract
- 2 eggs
- 45 ml milk
- 177 g all-purpose flour
- 5 g baking powder
- 3 g cinnamon
- Large pinch of salt
- 3 Red Prince Apples, peeled & thinly sliced
Instructions
Preheat oven to 375° F.
For the Streusel, combine all the dry ingredients, then rub in the butter until you reach a sand-like consistency. (A pastry knife or dough mix tool on a stand mixer will speed this up.)
For the cake, cream together the butter and sugar until light and fluffy.
Mix in the vanilla, then beat in the eggs one at a time, followed by the milk.
Fold in the dry ingredients (flour, baking powder, cinnamon, salt).
Lightly grease a springform pan with butter. Spread the cake batter evenly in the bottom.
Neatly arrange a layer of sliced apples on top of the batter.
Sprinkle the streusel topping evenly over the apples. Bake for 45 minutes.
Allow to cool and garnish with powdered sugar.
