
I have to tell you, when the kids came home from school to this apple coffee cake, they were in love! Sameer said it was the best dessert he’s ever had! #momwin I have to say, what really took this cake to the next level is the apples I used. They’re great as a snack on their own but also so delicious when baked! Have you tried local Red Prince Apples yet? They’re different from your usual apple. They’re harvested in the fall and cellared until the new year. The flavour and texture enhances during the time they are cellared, then they’re sold fresh in the winter when their taste is at its peak! So good!

This apple coffee cake was developed by Jenan Zammar and we know your family will enjoy it as much as hers did! It comes together by combining a store bought cake mix with our Red Prince apples so it’s simple enough for a weekday treat as well as a special celebration.

Red Prince Apple Coffee Cake
Ingredients
For the cake:
- 1 box vanilla cake mix (the ingredients I needed are below but follow the box instructions)
- 3 eggs
- ½ cup oil
- 1 cup water
For the crumble:
- 1 cup graham crumbs
- ⅔ cup brown sugar
- ¾ cup melted butter
- 1 tsp cinnamon
For the glaze:
- ½ cup icing sugar
- 1-2 tbsp milk (depending on desired consistency)
- 2 Red Prince apples, peeled, cored and diced
- Cooking spray
Instructions
Preheat oven to 350°F.
In a bowl, add cake mix, eggs, oil and water. Whisk until smooth.
In a separate bowl, mix graham crumbs, sugar, butter and cinnamon.
Spray a 9×13 baking dish with cooking spray.
Pour half of the cake batter into the baking dish then sprinkle ½ of the crumble and ½ of the apples.
Pour remaining batter then sprinkle remaining apples and crumble.
Bake for 40-45 minutes or until a toothpick inserted comes out clean.
Allow to cool then drizzle glaze over the entire surface.
