Ingredients:

2 Red Prince apples cored and diced

1 tsp ground cinnamon

1 tbsp white sugar

1 store-bought pastry dough

½ cup apricot jam

½ cup prepared custard (should be room temperature)

1 tbsp cream (35%) or 1 egg, beaten

Instructions:

Makes 2 – 4 servings

In a small saucepan, lightly cook the diced apple with cinnamon and sugar, about 5-8 minutes to gently soften the apples. Set aside to cool.

Preheat oven to 350°F (230°C).

Place the pastry dough on a parchment paper-lined baking tray.

Spread a layer of apricot jam evenly on the pastry dough as the base, leaving a 1-inch border along the pastry’s edge.

Evenly spread room temperature custard on top of the jam.

Gently fold the edges of the pastry, pleating to form a circle, leaving the center uncovered.

Using a pastry brush, lightly apply the cream OR egg to the exposed crust.

Bake for 30-45 minutes or until the crust is golden.

Serve warm or at room temperature.
