Red Prince Apple Raisin Chutney with Baked Cinnamon Pita Chips

Have you ever made your own Chutney? We’re guessing most of you haven’t – some of you probably haven’t even tried it before! Let the Red Prince® culture you a bit with this deliciously sweet version of an East Indian classic.

Ingredients:

 

3 – Red Prince® Apples

 

1/2 – Onion

1/4 cup (50 mL) – Red wine vinegar

1/8 cup (30 mL) – Agave syrup

1/2 tsp (2 mL) – Lemon zest

1/2 tsp (2 mL) – Grated ginger

1/2 cup (125 mL) – Raisins

 

Cinnamon Pita Chips

2 – Plain or whole wheat pita bread

1 tbsp (15 mL) – Olive oil

1/2 tsp (2 mL) – Cinnamon

Method:

Wash and peel three Red Prince® apples, remove the core and dice. Dice 1/2 onion.

Place Red Prince apples, onion, 1/4 cup (50 mL) red wine vinegar, 1/8 cup (30 mL) agave syrup, 1/2 tsp (2 mL) lemon zest and 1/2 tsp (2 mL) grated ginger in small pot. Bring to boil and then turn the heat to low. Cook on low heat for 20 minutes.

Add 1/2 cup (125 mL) raisins and cook for 5 more minutes.

Cool in fridge.

Preheat oven to 350°F (180°C). Cut two pieces pita bread into triangles, brush lightly with 1 tbsp (15 mL) olive oil and place on baking tray lined with parchment. Sprinkle 1/2 tsp (2 mL) cinnamon on the pita triangles and bake for 6 to 8 minutes or until crispy.

Dip the pita chips into the chutney and enjoy!
