Red Prince Apple® Spice Muffins
These muffins are easy to make in one bowl and are the perfect addition for packed lunches or a leisurely coffee break. A generous portion of applesauce helps to provide moisture and flavour without the need for a significant amount of shortening.
Ingredients
1/3 cup shortening
½ cup light brown sugar
1 egg
1 ¼ cup flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
2 tsp cinnamon
½ tsp nutmeg
1 cup Red Prince® applesauce (Peel, core and chop approx. 3 Red Prince® apples into 1cm cubes. Cook until soft but not entirely mushy.)
Add ½ c raisins if desired
Instructions
Oven at 350 degrees (180 F). Place 12 muffin liners in a tin.
Make applesauce, set aside. This step can be done a day or two in advance. Store in airtight container in the fridge.
To make muffins, cream shortening with brown sugar. Stir in egg until well combined. Add flour, baking powder, baking soda, salt, cinnamon and nutmeg. Then applesauce. Stir well to combine. If raisons are desired, fold these in.
Scoop 12 equal portions into prepared muffin pan. Bake for approx. 25 min or until top springs back when lightly pressed or inserted toothpick comes out clean. Let rest on rack for 10 minutes, then remove from pan and cool. Stores well in airtight container for up to 3 days. Alternatively freeze in airtight container for up to 6 months.
